(Very) Great Classics
Cake Collection, Spring-Summer 2010
Christophe Michalak, Head Pastrychef at the Hôtel Plaza Athénée, is taking another new look at some (very) great classics for his Spring-Summer 2010 Collection.
With the three watchwords that guide him in his work (Emotion, Equilibrium and Elegance), he delicately and deliciously reinvents tarts and desserts in XXL format so that the flavours can express themselves to the full.
The strawberry tart is accompanied by pistachio cream, the rum baba is dressed in Madagascar vanilla, the tiramisu rests on a crunchy sweet shortcrust base and the St. Tropez tart becomes cylindrical. He may have gone against received ideas but our eyes love what they see and our tastebuds adore what they savour.
In fact, they adore what they taste all the more because, with the “large format” idea, everybody can choose the portion size they prefer – from a “little treat” to a size more suited to inveterate food lovers.

Strawberry Tart with Pistachio Cream – served at the Relais Plaza
A soft base made with pistachios from Sicily topped with delicately arranged wild strawberries and a mouthwatering pistachio cream. It’s enough to make you blush with pleasure

Vanilla Rum Baba – served at the Relais Plaza and Galerie
One of the Plaza Athénée’s own recipes, created in 1955 and redesigned by Christophe Michalak for food lovers. The light rum syrup and cream made with vanilla from Madagascar reveal their flavours more subtly in this giant rum baba.

Again for fans of red berries, this charlotte combines ladyfingers, raspberries infused in fresh verbena, raspberry bavaroise and preserved raspberries to calm your anxiety and awaken your tastebuds!

Tiramisu Tart – served at the Galerie des Gobelins and Relais Plaza
Yummy! This new version of Tiramisu is enough to melt the strongest resolve! It has it all - a crisp sweet shortcrust base, biscuit imbibed with fondant café moka, creamy mascarpone mousse, coffee cream and Muscavado sugar jelly. Now you see it; now you don’t – it’s disappeared like magic!

St. Tropez of my dreams – served at the Relais Plaza
The famous St. Tropez Tart has changed from round to cylindrical. The brioche melts in your mouth. The preserved lemon adds a touch of sharpness to a cake that includes a light pastry cream flavoured with orange flower water and caramelised hazelnuts. Guests are only too willing to share part of their dream with Christophe Michalak – but definitely not with anybody else! |
